Easy Mini Pancakes

This recipe best cook on sunday .... a great wake up call for your weekend brunch !
Serves 4

1 1/2 cups all-purpose flour
3 tbs brown sugar
1 cup fresh milk
1 1/4 ts baking powder
1medium eggs
1 tbs olive oil
Pancake syrup

1. In a large bowl, mix together flour, sugar, baking powder.
2. Add in olive oil.
3. Add in milk.
4. Stir until the mixture smooth.
5. Heat a non-stick pan on medium fire.
5. Spoon the mixture onto the pan by using small senduk.
6. Cook until tops are bubbly, about 2 minutes. Then flip the pancakes. Cook for 1 minute more.
7. Serve immediatelly topped with syrup.
